Transferring the Chardonnay juice post-press and gravity settling. The wire at the top is connected to the thermocouple which protrudes inside the tank via a thermowell. Temperatures are recorded throughout fermentation; if a temperature tends outside of the desired fermentation profile a text message is sent to the winemaker.
