| Our 2008 Chardonnay comes from the Vinelands Vineyard. The fruit was dominantly fermented in French Oak barrels and then aged in stainless steel tank. A small fraction was fermented without oak to add crispness to the final blend. The wine did not proceed thru malolactic fermentation. This winemaking technique lends a soft oak aroma and mouthfeel to the wine while not overpowering the fruit. The wine is unfined and unfiltered. |
